Hand-picking and sorting. Picking is at ripeness not over ripeness. Open ferments as a combination of whole berries and whole bunches – about half of each. Old French oak.

“Shiraz and Pinot Noir have a bit of a history in the Hunter Valley, north of Sydney. But you’d have to think this is the first example ever to match Shiraz from the Adelaide Hills with Tasmanian Pinot. To be honest I approached this wine with a bit of caution – this could go one of two ways.

And it was a………hit! A great little wine that starts out savoury and earthy with clove, aged meat, and white pepper spice of Adelaide Hills Shiraz matched up with some Pinot rhubarb and Chinese five spice. It’s then dry, surprisingly hearty and powerful – with great depth of fruit and drinkability. It is a cracking winter wine for an open fire with nuances, twists and turns, and a bit of an adventure too. Long and quite powerful with some chalky tannins, it will get better over the next five years.”

Ever since day one, back in 2015, we’ve always been about drinkability and deliciousness. Wines of purity, flavour, balance and purpose…served with a twist.

Our young winemaking team, spearheaded by Matt Large, is driven to explore otherness through new regions, different varieties and experimental winemaking styles. Each time they ask the simple questions “Are we passionate about this place? Does this grape excite us? Can we have fun with it?”. That’s the guidebook to The Other Wine Co. Some of them are classics, some of them are mavericks; all of them make sense to us.

We proudly make these wines at Shaw + Smith, in our beautiful Adelaide Hills home in Balhannah. We’ve got some brilliant kit and some super creative minds here to work with. You can count on us to always be on the look out for something new, we’re thirsty for any opportunity to push texture and chase freshness. You don’t try, you don’t learn.

And so we welcome you to our home here on the web. We want you to enjoy your visit and if you’d like to chat to us about anything give us a shout. As much as we love drinking these wines, they only exist for you to enjoy, be that at home, or in a restaurant or bar. Meet Matt

Matt is an intuitive winemaker, always seeking to create precise and sensitive wines that clearly express a sense of place, while employing best-practice sustainable viticulture. Prior to joining Shaw + Smith, Matt was Assistant Winemaker and Vineyard Manager at Shadowfax Winery – across their Macedon Range sites.

Matt also has a keen interest in Piedmont and Nebbiolo, and in 2017, Matt worked vintage at Figli Luigi Oddero in La Morra. Matt now works vintage each year in Piedmont (except 2020, of course), and makes his own wines from there under his own label. Matt has a thoughtful approach to winemaking and is closely in tune with viticulture, and is embracing the philosophy at Shaw + Smith of making wines that reflect our unique sites and climate.
