Crushed then Fermented in small 4 tonne fermenters 2 pump overs per day were used to extract fine tannin and colour. After 12-14 days when fruit flavour and tannin extraction were optimised the individual parcels were pressed and primary fermentation was completed to dryness. The wines were then racked into French oak barrels for 12 months of maturation, before blending.

For the 2021 vintage, that magic has been delivered in wines with bright fruit and subtle power, lovely rounded tannin’s in the reds and ripe fruit acids in the whites. 2021 was a very cool year and one of the wettest on record for Gundagai. It saw fruit yield down by around 30% mainly due to the drought condition from the previous few years and disease pressure that comes with a wet year.
