This Fiano was sourced from our Somerset Vineyard. The block was planted on red volcanic clay soil, over weathered limestone. The fruit was cold soaked on skins for 48 hours before being pressed off and fermented on solids in tank. The wine was allowed to go through a full malolactic fermentation in neutral French oak, where it underwent élevage.
