Our best blocks of Cabernet Sauvignon are reserved for the ‘Book Ends’. Most is from the Karri Oak and Windy Hill vineyards in Mt Barker with just a touch of Frankland River Malbec (3%) added to the final blend. It was an excellent season, we enjoyed great conditions during the growing and ripening period and (unusually), also throughout the entire vintage! (it was certainly one of the most stress-free vintages our winemakers have ever experienced). The batches of fruit were all fermented separately with regular pump overs to maximise colour and flavour extraction. A portion was then left on skins post ferment before all being matured in French oak barriques, approx 30% new, for 18 months.

Super dark and dense crimsony red.

Very dense, dark berry fruits aromas eg ripe blackberry and blackcurrant with some dark plum characters along with a complexing hint of black olives and an attractive lift of violets.

Our 2018 ‘Book Ends’ has the berry fruit flavours so typical of Cabernet along with its great tannin structure. It has red berry fruits, ‘bramble’ berry and blackcurrant/cassis flavours along with a hint of earthiness; there’s also some light dusty characters from its period of oak maturation to add to its complexity. There’s a dark chocolate character (think 70%) and those drying, quite chewy tannins that contribute to its great persistence and palate length and will ensure it ages well.

Medium bodied, our ‘Book Ends’ Cabernet can be enjoyed now with many foods, it will also reward further cellaring as it continues to develop over the next 6 ++ years.
