VINTAGE 2019 – a cooler vintage perfect for ripening grapes for sparkling. Good natural acid retention alongside bright and delicate fruit flavours.

VARIETIES 55% Pinot Noir; 45% Chardonnay

APPEARANCE Subtle, pale blush salmon. Brilliant clarity, with a fine, persistent bead.

AROMA Complex aromas of freshly shucked oysters, brine and mushroom give way to perfumed fruits of pink lady, grapefruit and citrus blossom.

PALATE Crafted using the traditional method, this wine undergoes a four-year aging process on lees in the bottle before disgorgement. This prolonged maturation fosters the development of intricate characteristics and textures, unveiling notes of baked pastries, truffles, and cream that harmonize with delicate, aromatic fruit nuances. The result is a wine with a beautifully soft and delicate mousse and a fine, persistent bead that gracefully carries the flavours, consistently refreshing the palate.

OAK DETAIL The base wine was partially fermented in seasoned French oak barriques and puncheons to help build texture and mouthfeel.

CELLARING Ready for immediate drinking and will continue to evolve and drink well over the next 2-3 years.

About Fermoy Estate

About Fermoy Estate is a premium winery nestled in the beautiful region of Wilyabrup, the ‘jewel in the crown’ of the famous wine making region of Margaret River, Western Australia. It was established in 1985 by John and Beryl Anderson.

Wilyabrup, with its rich, loamy, well-drained soils, perfect temperatures and quality old vines is a purveyor’s paradise. Little wonder it is considered the ‘golden triangle’ of Margaret River. The main varieties grown are Cabernet Sauvignon, Semillon, Sauvignon Blanc, Chardonnay, Merlot, and Shiraz.

The winery is located right next door to the vineyard, so the grapes can be processed without delay, ensuring their premium qualities are retained. The winery processes some 350 tonnes of grapes each year.

Fermoy is one of the original established vineyards of the Margaret River region, but continually seeks to incorporate new ideas and technology. This reflects Fermoy’s ongoing quest to bring you the very best wines, while ensuring that everything we do is environmentally sustainable.
