Sapidity by meaning is a full and pleasant flavour, of complexity. For us, it is a new wine, a new style and something very exciting for Ben Murray and our wine direction.

Fruit sourced from the Wycroft vineyards of High Eden Valley, this is a blend of Semillon and Sauvignon Blanc grapes made in a style more akin to the Adriatic coast of Italy, including immediate skin contact. Grape skins offer a lot of texture and complexity when left in contact with the juice. In this case, skin contact has brought through the slightly citric/orange notes with underlying “sapidity”, adding those savoury/ saline elements to the wine.

Winemaking notes:
Harvested at night to retain freshness and acidity, the fruit was delivered to the winery in pristine condition. Crushed to open ferments in a style more akin to red wine, the fruit was allowed to begin fermentation immediately in contact with the skins. To achieve the secondary and tertiary notes we were seeking in this wine, there was a daily pump over of the juice to cover the skins for 6 days prior to basket pressing. Fermentation was completed between inert tank and French oak barriques to dryness, again adding to the palate structure.

The palate is, as the saying goes, ‘textured for extra pleasure’, with an almost mustard-honey richness, and satisfyingly mouth-puckering, kombucha-like tartness. “A little wild and intriguing, the grapes were fermented on skin, then partially matured in barrels. It’s gorgeously complex and fragrant on the nose, showing golden apple, apricot, oatmeal and mixed spice aromas, leading to a beautifully weighted palate offering broad mouthfeel and fine texture. In truth, Ben Murray is not one person, but two very passionate wine-lovers.

Like all great partnerships, it started with a common interest. For Daniel Benjamin Eggleton and Craig Murray Thompson, that interest happened to be a good drop of wine.

They dreamed of one day crafting premium small-batch wines made with elegance and texture, and with layers of stories and experience encased within the bottle.

Ben Murray became a second life; a return home, after being out in the world alone, to do it their own way.

Each wine is built upon a classically Barossan foundation. The land is tended and grapes treated according to the well-known methods that placed Barossa Valley wines on the vinous map. There is just one pair of hands that touches the wine after the grower has delivered the fruit to us.

But rules are made to be broken. We want our wines to be unique, worldly…well-travelled. So wherever there is tradition, there is innovation. The style and elegance of French and Italian winemaking is a key component in Ben Murray’s method of crafting wines that represent experience, perspective and worldliness.
