The terroir, the climate, the grape varieties, the care given to the harvest and the vinification are not enough to make a great wine. To this must be added the refusal of the easy way and the never satisfied desire to always do better.
The particularity of the terroir of Sainte Croix du Mont is unique in the world with its fossilized oyster bed dating back to the Tertiary era (22 million years ago). Thus the roots draw their nourishment directly from this thin soil, which requires suffering and effort from the vine, to create rare aromas.
Each of the appellations benefits from a very particular terroir, but above all from a very beautiful exposure of its vines. The choice of a high density (vines/hectare) and of the most adequate grape varieties (and rootstocks) to favor low yields, contributes to the quality of our wines.
