About Domaine de l’Évêché Wines
The Domaine de l’Évêché covers 14 hectares in several appellations: Mercurey, Bourgogne Côte Chalonnaise, Crémant de Bourgogne, Coteaux Bourguignons and Bourgogne Aligoté. Most of our production comes from Pinot Noir (80%) and Chardonnay (15%) but also Aligoté and Gamay (5%).
We take care of everything from production to marketing, on site, with our equipment and our team. Sales are divided half in France with our private and professional customers (cafés, hotels, restaurants and wine merchants) and half for export to more than 15 countries on 4 continents.
Our objective is to produce raw material of the highest possible quality thanks to the many manual works that we carry out in our vineyards and in respect of our terroirs.
Then we opt for a traditional vinification where each locality is vinified separately.
Our quality grapes can thus be transformed serenely in our cellar equipped with thermo-regulated stainless steel vats after a complete renovation in 2018.
Then the aging of the wines continues either in vats or in oak barrels in our cellars. The barrels are handcrafted in Burgundy with oak from French forests.
We are proud to carry out all the operations up to bottling and marketing without the help of external service providers.
