Full-bodied and decadent white wines that show texture and weight in the mouth. Varietals like Chardonnay, Viognier & Marsanne showcase their rich fruit flavours, alongside complex aromas of oak and barrel fermentation.

Fresh, refined aromas of flowers and fruit. On the palate, it is distinguished by particular subtlety: a delicious blend of softness and liveliness. Round and airy, it is very charming from its first youth.

Set in the very heart of the Grand Cru area, Vaudesir has a subtle diversity in exposure. Its steep terrain contains more clay than limestone and produces wines of great finesse and elegance.

HARVEST: manual.

VINIFICATION: Use of the principle of gravity so as to avoid all pumping, which could harm the quality of the wine. Brief (1½ – 2 hours) pneumatic pressing to obtain a gentle separation of the solid and liquid parts of the grape. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally. The must is run into French oak barrels (aged of 6 years in average) for 50 to 60% of the harvest. The remainder is vinified in small stainless steel vats.

MATURING: 14 to 15 months, of which 5 to 6 months on fine lees in French oak barrels, for 50 to 60% of the harvest. The end of maturation occurs in small stainless steel vats.

REVIEW
Not racked yet, some in barrel, some in tank. Clear pale colour, still with a light green tint. A fine and even quite delicate nose, early location, a touch of smoke and bacon, otherwise with a linear intensity that follows through very well. One for longer ageing. More on the apples right at the back. Drink from 2027-2034. Tasted: June 2022. 92-94 points JM MW insideburgundy

About William Fevre

One of the greatest domaines in Chablis. Founded by William Fevre in 1957, its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality.

In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.
