L’Ombre translates in French to ‘Out of the Sun’ or ‘In the Shade’ perhaps! L’Ombre showcases the energy and complexity that can be found in blending grape varieties that have a synergy and connection as Grenache, Mataro & Shiraz have for hundreds of years in Southern France, Mediterranean and Australia. Bright, crunchy, flavoursome and simply delicious Grenache boosted with another layer of meaty darkness and complexity via its old-world companions in Mataro & Shiraz. The maslin sand over rock topography of the Springs Hill vineyard which also sits at 200 metres above sea level allows grenache to ripen slowly and evenly whilst maintaining bright natural acid and a natural tannin profile. In the winery both the Grenache & Shiraz are destemmed to whole berries with a layer of whole bunches caked through the middle, allowing nature to gently macerate the free run juice from the skins over 14 day’s with gentle hand plunging and aeration morning & evening. We are looking for brightness, crunch and layers of structure from the bush vine Grenache knowing the Mataro & Shiraz will give us the darker, meatier and gentle spice notes that work so well in a GMS blend. Springs Hill vineyard is grown under minimal intervention and tended by the fine gentlemen growers Anthony & Gary Whaite. Look for mulberry, blackberry, pomegranate and mandarin notes across a palate, woven with Moroccan spice and layers of intrigue that this ancient blend of grapes can reward our senses with.
