The Classic Clare Cabernet Sauvignon is produced only in outstanding vintages. The hand harvested fruit was small batch. open fermented, basket pressed and matured in French oak barriques before bottling and maturation. Displaying a complex array of blackcurrant, choc-mint and spice aromas, the wine flows onto the palate powerfully with red fruits, cassis and spice building to a long and concentrated finish. Cellaring for up to 15 years will further enhance this classic Clare Valley wine.

 

The term ‘Classic’ is entirely apt with the Clare’s signature billow of dark fruit and spice, sluiced by a verdant lift of peppermint patty, drying across a bed of astringent tannins. These serve the purpose, though, corralling the flavours toward a signpost of poise and length. Bay leaf and thyme, too, This will age well.

A complex mix of red currants, blackberries, plums and mulberries with hints of musk, mint and black olive. French oak and cinnamon spice notes add interest and complexity.

Palate
A powerful yet elegant wine exhibiting layers of flavour and complexity. Red and black currants, plums, and dark cherries flavours mix seamlessly with hints mint, dark chocolate and subtle cedar spice. Fine velvety tannins and French oak maturation provide an impressive structure, soft plush texture and considerable persistence of flavour.
