This single-site, single-variety Shiraz is sourced from a unique block on Dash Farms Vineyard on the western ridge of Leanganook. In Pat’s words, this is “a fabulous block of grapes” that he earmarked long ago for a delicate wine. The block sits on granite at a lofty 460 metres.

The fruit was harvested on 6th March and very gently pressed as bunches to old puncheons. After six weeks, the wine was transferred to stainless steel for malolactic conversion and allowed to settle before racking and a classic tirage bottling. Pat sums it up best: “Much like last year, we have a gorgeous balance of bright fruits with persistent acidity and a frame that allows the granite minerality to shine. It’s quite a classic wine, with a beautiful savoury spectrum and delicate fruit.” Pat’s underselling it; this is a wow wine!

Pat Underwood uncovers unique vineyards in Central Victoria, from dry-grown plots in Malmsbury, obscure plantings of indigenous Venetian varieties or iron rich sites planted to beautifully bloody and mineral Nebbiolo.

Pat takes fruits from across multiple well-farmed sites across Central Victoria. These are, by and large, vineyards and regions that fly under the radar. Well, Pat is making more and more people sit up and take notice.

He makes everything from classic, straight-down-the-line Shiraz and Chardonnay to more esoteric blends and naturally made experimental wines. These are joyful, friendly, charismatic wines from a young guy who shares those same characteristics.
