A young and vibrant Pinot Gris…White florals, citrus pollen, pear, nashi and lemongrass on the nose.

The palate is compact and complex initially then opens up to something textural, mineral and saline. Fresh citrus, pear, ginger spice and hints of lemongrass flow over the palate, finishing with mineral freshness.

The fruit is handpicked between three batches and whole bunched pressed using a gentle champagne press cycle. No enzymes or sulphur are used at the press tray and the juice is oxidatively handled to get rid of oxidative enzymes early on in the wine making process. The wine is left at ambient and transferred to barrel with full solids and minimal sulphur added.

Fermentation occurs using wild yeast and is then left unsulfured to the following summer at which time most of the wine has completed full malolactic fermentation. A minimal amount of sulfur is added in the spring and left in barrel for a total of 6 months where it is racked off gross lees and into tank. The resulting wine is bottled using no finings and minimal filtration.

First two vineyards of Merricks North and Talland Hill new block were picked early to maintain fresh acidity. Whilst the up the hill vineyard of Bayview was left longer on the vine to produce riper and bolder flavours.

With a long history of trusted working relationships, Sam selects growers with the utmost care. Every aspect of the growing — from pruning, canopy management and harvesting — is overseen.

At harvest, the fruit is carefully hand – picked and transferred to our Polperro winery on the Mornington Peninsula to be vinified and matured. Here the same care and dedication is shown to these selected parcels of fruit as to the wines of the Polperro label. The resulting wines are true expressions of their region.

Polperro Winery is nestled among the vines and shaded by ancient Angophora trees on a stunning 25 acre property in the heart of Red Hill, Mornington Peninsula. Established in 2014, Polperro is a boutique winery that offers on-site vineyard dining, intimate cellar door and luxury accommodation.
