At Simon Tolley Wines we are firm believers that great wine is made in the vineyard. To this end no stone is unturned to grow the best quality fruit we can on our family vineyard at Woodside in the Adelaide Hills. To grow the best fruit, you need to select not only the right site but also the right clone to deliver the results that you want to achieve in the finished wine. For Sauvignon Blanc, we have chosen F4V6. This is one of the most highly rated Sauvignon Blanc Clones and was first registered in Australia in 1975. The original selection was from Chateau d’Yquem in France in the 1880’s and came to Australia via Wente Vineyards, California, in 1958. This clone has moderate yields, bunch size, berry size and bunch compactness and produces fruit with pronounced aromatic and citrus characters.

An aromatic, fruit-driven styled wine. The palate is clean and crisp of medium weight and alcohol. Flavours are predominately gooseberry and lychees with hints of guava and pink grapefruit. The wine is refreshing with a long lingering finish.

About Simon Tolley

Great wine is made in the vineyard – and fermented and bottled best where it’s grown. Simon Tolley is a traditionalist and both these beliefs apply where he lives and works in the Adelaide Hills. Combine the soils, the rain and the sun – and blend green-thumbed expertise from years of vine-growing knowledge plus the wisdom of his forefathers – and great winemaking is bound to follow. The Simon Tolley recipe is flavour-rich and balanced: distinctive, long-lived wines.

Simon holds a Bachelor of Applied Science (Viticultural Science, 1998). He’s managed many vineyards, from the Padthaway and Naracoorte regions (lower South East, SA) to the Clare Valley and McLaren Vale (SA), as well as at Margaret River, WA. Returning to the Adelaide Hills, he first worked in a technical role, then later as contract services manager and a regional manager. Coming home reinforced his belief that the Hills always was the best place to create fine wine.
